Hedgehog Slice Recipe

Have you ever heard of Hedgehog Slice? My dear friend Nicole, originally from Australia, introduced me to this delicious slice. No-bake brownies with Coconut and chocolate are very popular in Australia.

Nicole is a wonderful woman. She’s strong, Godly, and has many talents. She’s more like a sibling to me and one of my most treasured relationships. She is an amazing mother and a fantastic cook and baker. She has a Facebook page, Salmela’s Family Kitchen and her blog is Mum Pastor Cook Aspergers Just an Ordinary Life. I will be updating her blog with many of the recipes.

Since I had never heard of Hedgehog Slice before, I immediately googled it to find so many variations. I chose to try a recipe that had more chocolate!

The slice was delicious! My parents, who are not fond of chocolate, enjoyed these little chocolate slices.

The recipe called for desiccated Coconut, but I didn’t have any then.

HEDGEHOG SLICES

Setting the time 1 hour

Ingredients

Biscuits – 250gm

I did not use the 1/2 cup of desiccated Coconut.

Nuts (I used almonds), 1/2 cup chopped

Cocoa powder, two tablespoons

Chocolate chips – 1 cup

Butter – 100gm

Condensed Milk – 295g

A tiny pinch of salt

The topping

Chocolate chips – 1 cup

Oil – 1 tablespoon

Method

Makes 16 squares

Line and grease a square 8-inch baking pan, leaving an overhang.

Roll the biscuits with a rolling pin until they are crushed. Be sure to crush the biscuits coarsely.

Combine the cocoa powder, nuts, and biscuits in a large bowl. Set aside.

Add the chocolate chips, coffee granules, and condensed Milk to another small bowl.

Melt it over low heat for five minutes or in the microwave for one minute. Mix well.

Mix well. Add the chocolate mixture to your biscuit mixture. Mix well.

Spread the mixture evenly in a greased pan.

The topping Melt 1 cup chocolate chips in 1 tbsp oil. Mix well.

Spread the chocolate biscuits in the pan with this mixture.

Place a clingfilm over the mixture in the fridge for 1 hour.

Remove the slice and remove it.

Use a blender to grind the biscuits, but make it slightly coarse so that the slice has a nice crunch with the nuts.

Toasted nuts can be added to the mixture by heating them in the microwave or the oven.

These can be cut into smaller pieces.
