Lemon Slice Recipe
Ingredients
1 cup NESTLE Sweetened condensed milk
100g Butter
200g granita biscuits
Coles Desiccated Coconut
Lemon rind, finely grated: 2 tsp
Lemon icing
2 cups pure icing sugar
20g of butter, softened
Lemon juice, 2 1/2 tablespoons

The base of a 15.5cm by 25cm slab pan should be greased to a depth of 3cm. Line the bottom and sides of the pan with baking paper. Extend the paper 2cm beyond the edges.
Over medium heat, place the condensed milk in a small pan with butter. Stirring constantly; cook for 5 minutes or until smooth. Remove from heat.
Process the biscuits in a food processor until they are fine crumbs. Transfer the biscuits to a bowl. Add the coconut and lemon peel. Mix well. Add the hot butter mixture. Combine well. Mix well. Press the mixture into the prepared pan. Cover. Cover.
Sift the icing into a bowl. Add the butter and lemon. With a wooden spatula, beat until combined and smooth. Spread the icing on top of the slice. Keep the portion at room temperature for 30 minutes or until the icing is set. Cut into pieces. Serve.
