Rice Paper Rolls Recipe

Rice Paper Vegetarian Spring Rolls, also known as Summer Rolls, are perfect for summer picnics and parties. The rice paper rolls can be filled in many different ways. Most often, glass noodles are used. This recipe uses tofu, roasted mushroom, and some raw vegetables, all tossed with a spicy dressing.

Ingredients

Eight to ten rice paper rolls

Filling ingredients for spring rolls

Finely chopped 100 Tofu

100 grams Button mushrooms, finely chopped

Half Red Bell Pepper (Capsicum ), thinly slices

1/2 cup Raw papaya, grated

1 Cucumber, de-seeded and thinly sliced

1 Carrot (Gajjar) , grated

3 to 4 Spring Onion, Bulb & Greens, finely chopped.

Mint leaves (Pudina), a small bunch

Dressing Ingredients

1 Tablespoon Rice Vinegar

1/2 teaspoon Red Chilli sauce

1/2 teaspoon Honey

Lemon Juice from one slight citrus

Coriander leaves (Dhania), small bunch, finely sliced

Salt to taste

Prepare the vegetables first for the rice paper Vegetarian Spring Rolls Recipe.

Heat a teaspoon of oil and stir-fry mushrooms in a wok until they are softened. Please turn off the heat once they are cooked and set aside.

Place the vegetables in a large serving bowl. Cut them lengthways or according to the ingredients list. Add the mushrooms that have been sauteed to the vegetables. Pour the dressing over the vegetables, and mix well. Adjust the spice and salt levels to your liking.

Next, we will soften the rice wrappers to create the covers for spring rolls. Fill a large pan with warm, lukewarm water. Immerse the rice wrapper in warm water. Let it rest for 30 seconds. The wrapper will begin to soften. Remove the rice wrapper carefully from the water. Spread it out on a board.

Next, we will make spring rolls. The filling should be placed in the middle of the wrapper. Place only a small amount at a given time. You must have enough space to roll it up into a spring roll.

Roll the wrapper up from the bottom to the top. Place the roll carefully on a plate.

Continue the process of filling, shaping, and soaking the rice wrappers. Arrange them on a serving platter and cover them with a moist muslin cloth. Cover the serving platter with a damp muslin cloth to serve the spring rolls later.

Remove the clingfilm, cut the Vegetarian Rice Paper Spring Rolls in half, and serve with Chilli Peanut Dipping Sauce.
