Rice Salad Recipe

Ingredients

2 cups cooked (brown or white rice, or mix it up)

Celery, chopped to 1/4 cup

1 Apple, roughly chopped (about 1 1/2 cups)

1/4 cup raisins

Almonds, 2 Tablespoons sliced

Half a cup of plain low-fat yogurt

Orange juice two teaspoons

Sugar 2 teaspoons

Directions

Hands should be washed with soap and warm water.

Mix well the rice, celery apple, raisins, and almonds.

Stir sugar, yogurt, orange juice, and sugar until sugar dissolves.

Mix well. Pour the yogurt mixture on top of the rice mixture. Cover and refrigerate the mixture until ready to serve.

Refrigerate leftovers for 2 hours.

Notes

You can add any of your favorite fruits to the mix for variety.

Use at least half of the brown rice to make this a whole-grain recipe.
