Coconut Lime Watermelon Slushie

You probably knew that I was going to send you a watermelon recipe as you follow me on Snapchat and Instagram. Just in case you’re wondering, I post all my secrets on social media.

You can make this super easy, refreshing, and healthy recipe when you’re looking for something to eat on hot days.

This recipe only requires three ingredients and a blender. The base is made from frozen Watermelon; coconut milk adds creaminess and complements the flavors, while lime juice balances out the sweetness.

Ingredients

WATERMELON JUICE

  • One small seedless Watermelon (cubed).

WATERMELON SLUSHIE

  • Watermelon – 4 cups (616g)
  • One medium lime (juiced)
  • 1/3 cup light coconut milk
  • Add more watermelon juice to the 1/2 cup (to make it easier to blend)
  • Sweetener of your choice (optional/such as maple syrup, honey, or honey in the case that you are not vegan).
  • 1 pinch sea salt (optional)

Instructions

  • Half a ripe, seedless watermelon. Scoop out Tablespoon-sized portions (or cut into cubes with a knife). Place on a baking sheet lined with parchment paper. Freeze for 3-4 hours until frozen.
  • Meanwhile, add another small seedless watermelon (without the rind) to the blender. Blend until smooth, adding water (if necessary) if you need to.
  • Optional: drape a large thin dish towel on top of a bowl to catch the juice. Gather the corners and lift them to squeeze out the juice, leaving behind the pulp. There shouldn’t be a lot, but it will make the juice more smooth. Transfer the juice to a mason jar, cover, and refrigerate. It should last for at least 3-4 days.
  • Add coconut milk, lime, and watermelon juice into a blender once the Watermelon has been frozen. Blend on low until smooth and creamy. To encourage the blender to move along, you will need to scrape off the sides of it and blend it on low. Add a little more Watermelon, but not so much that it becomes too thin.
  • Taste and adjust the flavor as necessary. Add more coconut to increase creaminess. Add lime to brighten the drink. Use a pinch of sea salt to boost sweetness. Blend again and taste it – repeat if necessary.
  • Serve in chilled watermelon rinds or chilled glasses. Garnish with a wedge of lime.
  • This recipe is generously proportioned to serve 2. Fresh is best! Tip: Use Popsicle molds to freeze leftovers.
